Keto shrimp and grits without all the carbs!
This recipe is especially wonderful if you are craving some comfort food, but do not want all the carbs! You can count that this recipe is only 9.3 net carbs per serving! It sounds terrific if you ask me! As a southern gal, growing up in Florida, I always appreciate this style of food. In this recipe, I have traded out regular pork bacon for turkey bacon because some people may not tolerate any pork products.
If you would like, feel free to use pork or chicken bacon as well. If you are ketotarian and avoid animal products, you can use Tofu or Tempeh bacon ( but keep in mind this may add more carbs). Another thing I like about this recipe is that it is dairy-free! Some recipes may call for heavy whipping cream, but I use full fat coconut milk instead!
As for the cauliflower rice, feel free to make your own, but in this recipe, I took the easier route and purchased it frozen pre-packaged. It just makes it a lot easier when I have worked all day! Most grocery stores will carry cauliflower rice in their frozen section.
You could also buy a medium head of cauliflower, rinse good and chop it up then place in a food processor. After this, you would steam it on a stove for about 7 minutes.
Keto Shrimp and Grits
- 1 lb shrimp
- 6 slices turkey bacon
- ½ small white onion, diced
- ¼ cup cilantro
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp coconut aminos
- 1 cup shitaki mushrooms or mushroom of choice
- 4 cups cauliflower rice
- 2 tsp salt
- 3 tbsp coconut oil
- 1 cup full fat coconut milk
- ¼ green onions, sliced
- 1 tsp freshly ground pepper

Fry bacon, keep the grease and set aside.

Unpeel the shrimp and rinse off thoroughly. Make sure to devein! Rinse and chop the following: mushrooms, cilantro, and onion.

Saute shrimp, mushrooms, white onion, cilantro, and bacon together in a large skillet using 2 tbsp of coconut oil. Add 1 tsp of onion powder and garlic powder. 1-2 tsp of salt as well. Saute about 20 minutes.

Cook cauliflower rice and stir fry this in a large pan as well with 1 tbsp of coconut oil for about 15 minutes on medium heat. (You can do this whether you used frozen or made yourself).

After cauliflower rice is cooked, add in 1 cup of coconut milk along with 2 tbsp of liquid aminos. Add a little bacon grease. Salt lightly to taste if desired.

Add the shrimp and bacon mixture to top of the cauliflower rice. Serve with sliced green onions on top and freshly ground pepper. Enjoy!
