Cilantro Brussel Sprouts and Mushroom Stir-Fry
This cilantro Brussel sprouts and mushroom stir- fry is full of beautiful ingredients! All in all, it is perfect for someone who follows a vegan, ketotarian, gluten-free, or ketogenic lifestyle! Brussel sprouts and mushrooms are significant for immune boosting! In general, it is a known fact, that they will help with the detoxification process and will help shuttle toxins out of your system.
Why eat Brussel sprouts?
Eating Brussel sprouts may especially help if you are doing a cleanse or trying to recover from an illness. You can read more about this here. I like to serve this recipe with cauliflower rice on top of a bed of microgreens. This helps to add extra alkalinization to the recipe. The avocado in this recipe provides a lot of essential fats that will benefit your cells! You can use this recipe by itself, or you can enjoy served with chicken, fish, or Tofu! Whichever you prefer!

Overall, you will enjoy making this and feel the benefits to your body and soul! FYI. The net carb count came in at around 10.3 net carbs per serving for the stir fry only. I did not include cauliflower rice or microgreens in the overall count. The net carbs of these will depend on how much you use( which is still very little). For example, if you were to eat two 3/4cups of cauliflower rice, it would be two net carbs. Please use the Cronometer.com app to figure out specifics!
Cilantro Brussel Sprouts and Mushroom Stir-Fry
This is a delicious, detoxifying dish that is keto friendly!
Ingredients for Stir-fry
- 2 cups shiitake mushrooms
- 2 cups Brussel sprouts
- ½ cup green onion
- ¼ cup cilantro
- 2 tbsp avocado oil
- 1 tbsp curry powder
- 1 tbsp turmeric powder
- 1 tbsp pine nuts
- 2 tsp coconut aminos
Ingredients for sauce
- 1 tbsp coconut aminos
- 2 tsp red onion
- ½ avocado
- 3 tsp salt
- 2 cups water
- 2 tbsp tahini sauce
- ¼ cup cilantro
- ¼ cup pecans
Directions for Sauce

Prepare the sauce first so right after the stir fry is done you can place it on top of it while it is still hot. Combine all of the above ingredients into a food processor until everything is well mixed.
Directions for Cauliflower rice

Cauliflower rice can be done in two different ways. If I work, I usually like to just purchase a bag in the frozen section to make my life easier. You can always make your own too! Just purchase a head of cauliflower, rinse really well and then place in food processor. After this, you can plan on steaming it for about 7 minutes.
Directions for Stir-fry

Cut up all the vegetables which include the shiitake mushrooms, Brussels sprouts, green onions, and cilantro.

In a wok or large pan, place about 2 tbsp avocado oil and turn to medium heat. Add all vegetables, and cook until they are all tender.

Add all the spices, coconut aminos and pine nuts. Cook for another 5 minutes until finished.

Once stir fry is done, place the sauce on top of it and serve on cauliflower rice. As mentioned before, you can also serve on a bed of microgreens of your choice!
